This level of ‘yummy’ will make you happy for the whole day, so prepare yourself. BEHOLD!

The Vegan Brownie

I’ve tried this recipe three times, and I think I’ve finally got it right. It’s really easy, so if you’re culinarily challenged like me, you’ll feel like a damn good baker after making these.

You’ll need:

  • 2 cups of all-purpose flour
  • 2 cups sugar
  • 1 teaspoon of salt
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 3/4 cup of cocoa powder (I use Green&Blacks’ hot chocolate powder)
  • 1 cup water
  • 1/2 cup vegetable oil (I used Flora sunflower oil)

All available in Tesco for a reasonable price (Tesco brand saves everyone’s life…well, pocket anyway!)

Also - don’t make the same mistake as me. I’m sure most people know this already but juuuust in case…by ‘cup’, I mean a really small cup. Like really, really small. I used a mug the first time. Cup, mug…tomato, tomato…right? Ha, wrong. Really, really wrong. 

Anyway, I throw all the dry stuff in a bowl, mix it, then make a little dip in the middle, throw all the wet ingredients in and mix. Throw it in a baking tray (line the baking tray with greaseproof paper..also make sure it isn’t too deep) and put it on the top shelf of the oven on gas mark 4 (350 degrees) for roughly 45 minutes. SIMPLE, YAY!

When I took it out of the oven it looked like thiiiiiis…

Then I flipped it over onto a plate!

Let it cool, slice, add soy cream or vegan ice-cream & just put your face in them…yep.

OBVIOUSLY, I’m going to start with the most important thing about being vegan - sugary, sweet and generally unhealthy yummies. 

If you’re lucky enough to have access to a Tesco, Holland & Barrett, Nourish or any other health food store, then this will make your day. 

They’re called ‘Dairy Free Buttons’…I know you’re probably thinking…vegan chocolate, HA, no thanks! But trust me, these are the real deal. They remind me a little bit of the Tweenies Easter egg I got when I was a kid. They also come in white chocolate which are reeeallly sweet, so after 2 you’re like woah, that’s enough. They’re 59c in Tesco and a little bit more expensive in Holland & Barrett, so they won’t break the bank. Word of advice; if you don’t live near a Tesco or health food store, jesus CHRIST stock up on these.

Ok, what lies below this might be the most amazing thing to happen to the vegan world. BEHOLD.

YES. Every rose has it’s thorn though, they’re €3.15. That’s the equivalent of 5 packets of Dairy Free Buttons. The choices is yours. Ha. See what I did there.

‘Choices’ do lots of other vegan chocolate goods, like bars and easter eggs, the crispy bars are pretty awesome but they’re €1.35 per bar. You’d get a shot of sambuca out of that if this was Liverpool. (It was crucial to get that in). 

These are just a few little treats that you can depend on for a sugar rush when you’re missing that Double Decker (sigh)..but they taste just as good, aren’t that expensive and you’re helping the planet. Aren’t you lovely.
